Lingonberries? Have you heard of them? I had never heard of them until I caught an episode of Dr Oz a while back. He was introducing a new super-fruit called the Lingonberry. It’s also known as a cow-berry. It’s related to the cranberry, bilberry and blueberry. Berries are high in a chemical called poly-phenols, which are powerful antioxidants. The lingonberry has higher concentrations of plant poly- phenols.

Native Americans in North America have a history of using this berry to help those suffering with diabetes and cardiovascular illness.

It’s not well known in the United States but is well known in Scandinavia. You can find lingonberries in some health food stores or I found lingonberries in a jar online here. My favorite way to shop!

They have a slightly tart flavor. I made a delicious salad dressing with lingonberries to mix with my fresh spinach from my patio pot garden. The salad was colorful and so yummy.

Here’s all you need:

Salad

fresh spinach

fresh purple kale

1 pint fresh strawberries sliced

Dressing

1/4 cup champagne vinegar

1/4 extra virgin olive oil

1/4 cup lingonberry jam

In a large bowl add spinach.

Add kale.

Add sliced strawberries.

In a small bowl add add champagne vinegar.

Extra virgin olive oil.

Add lingonberry jam or any other jam you like.

Whisk together until well blended.  I put mine in a small jar. Store in the refrigerator to chill.

After the dressing is chilled pour over salad mix and enjoy. So simple and so good. This is a great way to put extra antioxidants into your diet in a delicious way.
