Roasted Vegetable Udon Noodle Soup

Roasting vegetables brings out their earthy deliciousness, add them to udon noodle soup and you have soup perfection.

I love putting my own touch on the recipes I make. Whether it’s adding an extra ingredient or two, maybe some extra
spices, or vegetables. I make it my own creation!
Today I’m sharing a simple recipe using Original Fortune Udon Noodles. I hope you enjoy it as much as we did.

Roasted Vegetable Udon Noodle Soup

You’ll need:

• 1 package Fortune’s Udon Noodle

• 2 cups water

• 2 cups broccoli flowerets 

• 3 sweet peppers small

• 1 cup fresh spinach 

• 6 green onions

• 4 garlic cloves 

• Olive oil 

• Fresh ginger (optional) 

  1. Lightly coat a sheet pan (I cover mine with foil for easy clean up) with olive oil. Add the evenly chopped vegetables and lightly spray with olive oil.

2. Roast the broccoli, sweet peppers, garlic and green onions as directed in this recipe.

3. Add the 2 cups of water to a medium saucepan, bring to a boil. Add the udon noodles and the flavor packet, I’m using the Original Shoyu flavor.

4. Fortune offers three flavors of Udon noodles, the Original Shoyu flavor, Mushroom flavor, and Chicken flavor.
These are fresh udon noodles, and fresh always tastes better. You can find all 3 flavors in the refrigerated section of the grocery store.

5. Cook for 2 to 3 minutes, then add the fresh spinach.

6. Mix the roasted vegetables into the udon noodle soup.

7. Bring the udon noodle soup back up to a boil. Remove from heat.

Ingredients

  4. Add the 2 cups of water to a medium saucepan, bring to a boil. Add the udon noodles and the flavor packet, I’m using the Original Shoyu flavor.
  5. Cook for 2 to 3 minutes, then add the fresh spinach
  6. Mix the roasted vegetables into the udon noodle soup
  7. Bring the udon noodle soup back up to a boil. Remove from heating
