Spring is coming soon, believe it or not. It’s been a very long winter. With the coming of spring we will be having lots of strawberries at great prices. This week they were priced $1.00 a quart. That is an awesome price. I made these delicious Oatmeal Strawberry cookies. I hope you enjoy them as much as we did.
1 cup softened butter
1 1/4 cups brown sugar
3/4 cup sucanat/sugar
1 tablespoon honey
2 teaspoons pure vanilla extract
2 eggs
1 1/2 cups whole wheat flour
1/4 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
3 cups rolled oats
1 1/2 cups nuts and or chocolate chips I used 2 large Snickers bars chopped into small pieces.
1 1/2 cups strawberries, hulled ( cut in halves or quarters, depending on size)
In a large bowl cream together the butter and sugars.
Add the honey and mix together.
Add the eggs and mix.
Now add your flour.
Mix in the oats. It will be very thick.
Add your nuts or chips. I added 1 1/2 cups of chopped up snickers bars. I had them on hand and it includes nuts and chocolate so it sounds perfect to me. 🙂
Fold in the strawberries, careful not to overly mix so the strawberries get mushy.
Place by the tablespoonful on a lined baking sheet.
Bake for 8 to 10 minutes in a 375 F preheated oven.
These cookies are a little more wet then traditional oatmeal cookies so they spread out a bit more. Bake a little longer for a crisper cookie. The snickers bar made a delicious addition especially with the caramel. Yum!
