Today I am sharing a Peanut Butter and Pecan No Bake Cookie. I bought this huge bag of pecans at Sam’s for my Christmas baking and I thought they would be great mixed in with oatmeal and peanut butter for a cookie. I shared the Chocolate No-Bake cookie with you awhile back. This cookie doesn’t have any chocolate. But it will definitely satisfy your sweet cravings.
You’ll need:
1/2 cup butter
1/2 cup milk
1/2 cup sucanat/sugar
1/2 cup brown sugar
1/2 cup honey
1 cup peanut butter
1/2 teaspoon vanilla
2 cups instant oatmeal
1 1/2 cups chopped pecans
In a medium sauce pan melt the butter over medium heat.
Add the milk, sugar, brown sugar, honey, peanut butter and vanilla.
Bring to a boil and boil for 2 minutes. Stirring constantly.
Mix in the oatmeal and pecans.
Spoon onto a wax paper lined cookie sheet.
They taste a lot like the chocolate no bake cookies. I love the addition of the pecans. Makes it a little healthier … right? lol! I like to keep mine in the freezer. It keeps me from eating them all at once. 🙂 … just kidding. Enjoy.
