It’s that time of year again where I have plenty of zucchini. Last year I posted a recipe for zucchini bread so this time I thought I would try to make a chocolate zucchini bread. I found a recipe here and adapted to my liking.
You’ll need:
1 cup whole wheat flour
1/2 cup unsweetened cocoa powder
1/4 teaspoonpoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon sea salt
1/2 cup oil (I use expeller pressed coconut oil it doesn’t have a flavor)
1 /2cup sucanat
1/2 cup firmly packed brown sugar
2 eggs
1 1/2 cups shredded zucchini
shred your zucchini
In a large bowl combine, flour, cocoa, cinnamon, baking soda, baking powder and sea salt. Mix well.
In another bowl combine sugar, honey, and eggs. Beat together.
Fold in the shredded zucchini.
Add the flour mixture.
Stir until just moist and combined. Don’t over mix.
Pour into a greased ~ 9×5 inch loaf pan
.
Bake in a preheated 350 F oven for 55 to 60 minutes. It’s done when a toothpick comes out clean. Cool for 10 minutes on a wire rack in the pan.
