No-Bake Chocolate Peanut Butter Oatmeal Cookies

I must confess, sometimes when I make these No-Bake Chocolate Peanut Butter Oatmeal Cookies I don’t share any of them. I will make a batch and store them way in the back on the bottom shelf of the refrigerator where I figure my husband won’t look 🙂 Shameful isn’t it? But… that’s how good these cookies are! I have been making them since grade school. They aren’t a healthy snack, but they do at least have oatmeal and the oatmeal makes them over the top delicious.
You’ll need:
2 cups sugar
4 tablespoons cocoa
1/2 cup butter
1/2 cup milk
1 cup peanut butter
1 tablespoon vanilla
3 cups oatmeal
Waxed paper
In a large heavy sauce pan combine sugar, cocoa, butter, and milk.
Heat to boiling. Boil for one minute.
Remove from heat. Add peanut butter and vanilla.
Add oatmeal and mix.
Drop by teaspoonful onto the waxed paper.
I quick set them in the freezer and store then in the refrigerator in a closed container.
