Cantaloupe Salsa

Now that warm weather is here in Ohio, we like to eat lighter foods. The cantaloupe are very good and on sale this time of the year. In June we a have a cantaloupe variety called Honeyrock that are available for a limited time, usually about 2 weeks or so. Let me tell you they are so sweet! I will eat several in the next few weeks. I thought the sweetness would really compliment this recipe and it did.
I found a recipe and adapted to my liking. It’s only has a few fresh ingredients so it’s easy to make. I grew the onion and the cilantro in my garden.
You’ll need:
2 cups diced cantaloupe
2 cups diced cucumber
3 green onion sliced using white and some of the green
1/2 cup chopped cilantro
Mix all the above ingredients together and refrigerate. It’s best after it’s been sitting for at least an hour in the refrigerator. The flavors get a chance to blend together a little bit.
