Tuna Salad Sandwich with Egg

In the summer we like to eat light. We will have lots of salads. I like making a batch of Tuna Salad, you can either make a sandwich or put it on top of a bed of lettuce. Either way, it’s so yummy. Sometimes I’ll eat it with crackers or chips like Scoops. It’s simple to make and last for a few day in the refrigerator.

Tuna Salad Sandwich with Egg
Ingredients
- 1 small can of Tuna, I use solid white albacore tuna it doesn't have a fishy taste
- 1 hard boiled egg diced
- 1 pickle diced
- 1 tablespoon of pickle juice
- diced celery/optional
- diced onion/optional
- 1 to 2 tablespoons mayonnaise
- 1 teaspoon mustard I use spicy brown
- sea salt and fresh ground pepper
Instructions
- Mix together in a small bowl and chill.
That’s it. This is great to make ahead when you know you are going to have a busy day.
