Peanut Butter Buckeyes

Peanut Butter Buckeyes are by far my favorite homemade candy. They are easy to make and freeze well, so you can make them ahead of time. Be careful, though…they can be addicting. 🙂
Today I have my little helpers…
You’ll need:
1 cups butter softened
2 cups creamy peanut butter
4 cups confectioners sugar
1/2 teaspoon vanilla
4 cups semi sweet chocolate chips
Mix together in a large bowl the softened butter and peanut butter.
Add the sugar and vanilla. You can see my little helpers are having lots of fun. Look at Katie’s face….she liked to taste the powdered sugar. Ty loves the peanut butter.
Mix well.
Make one inch balls out of the dough and lay them on a cookie sheet.

Now we need to melt the chocolate baking chips. I melted mine in a small bowl in the microwave. You can melt the chocolate in a double broiler if you like. I find it’s easier to dip if you use a small bowl. Do not over heat the chocolate in the microwave…watch it close.
You can keep reheating the bowl of chocolate when it gets cool and clumpy. Usually after every couple of peanut butter balls.
Using a toothpick roll in the chocolate.
Set them on a cookie sheet to dry.
You can freeze Peanut Butter Buckeyes if you want in a sealed container. I keep mine refrigerated which you don’t have to.
