Mini Blueberry Pies

I recently got a great deal on fresh blueberries so I decided to make a few different recipes using the blueberries. After all blueberries are a super fruit. They are full of antioxidants, which we need to get rid of all those free radicals we take in which damage our cellular structure and DNA. Yikes! You can read more about the health benefits here.
I found a recipe for pie filling here. I changed it a bit.
You’ll need:
Pie Crust ~ 1 package store bought refrigerated pie crust or homemade, I used store bought today, feeling a little lazy. 😉
4 cups of fresh blueberries or 2 pints
1 Tablespoon lemon juice
1/4 cup whole wheat flour
1/2 cup sugar
1/4 teaspoon cinnamon
2 Tablespoons of butter, cut into small pieces
Unroll the crust, using a 4 inch bowl or whatever you can find. Cut the crust into 4 inch circles. I was able to get 6 per crust. I used the scraps for the top.
You may need to grease your pan, mine is non-stick. Push the dough circle into the pan.
Rinse you blueberries and put them in a medium bowl.
Mix in flour, sugar, cinnamon and lemon juice.
Mix until well coated.
Fill the pie crusts with the coated blueberries.
Put a little dab of butter on top of each pie.
Using the leftover scraps of dough make strips for the top.
Bake in a preheated 375 F degree oven for about 15 minutes or until bubbling and brown.
They pop out real nice and are delicious. Very simple to make. These would be nice to take to a cook-out, you can pick them up and eat them with your hands. 🙂 Enjoy!
