Mexican Rice

Good Morning all! It’s going to be a beautiful Sunday. A little chilly starting out. I’m bundled up in a nice warm sweater this morning. Today I plan on canning up some corn salsa. I ‘m still getting lots of tomatoes and have to find a way to not waste even one. Last night I made this simple side dish using the remaining vegetables growing in abundance in my garden. I’m sure we’ve all tried the packaged rice dishes. You can make this just as easy as the packaged stuff and know that it is SO much healthier for you.
You’ll need:
4 cups cooked brown or white rice (I always have frozen cooked whole grain brown rice in my freezer. It defrosts in minutes so it’s recipe ready in no time).
1/2 cup diced onion
3 – 4 cloves fresh garlic minced
1/2 cup green pepper
1/4 – 1/2 teaspoon cayenne pepper ( more or less depending on your tastes).
In a large fry pan saute onion 3 minutes.
Add garlic saute another couple minutes.
Add green pepper sautee until softened about 3 minutes.
Add tomatoes with juice, sprinkle with cayenne pepper.
Add rice and heat through.
That’s it, and it’s ready to eat. Pretty simple huh? Enjoy your Sunday, I know I will 🙂
