Spicy Sausage and Cabbage Soup in the Slow Cooker

I can’t get enough soup in the winter. I feel like I’m always cold and soup really warms me up inside and out. I have these stoneware bowls that I use for soup. They are perfect. They keep the soup hot longer, and you can warm your hands on the outside of the bowl. Ahhh so nice.
I came across a good deal on low sodium V8 juice. I thought, what can I make with this? I checked out the rest of the food that I had on hand and this is what I came up with.
It has a little kick so look out!
Spicy Sausage and Cabbage Soup
1 pound spicy ground sausage
1 32 ounce low sodium V8 juice
1 chopped onion
1/2 cup chopped carrots
1 cup sugar snap peas
1 /2 head cabbage chopped fine
left-over cooked cauliflower
4 cups chicken stock (adjust amount depending on the size of your crock pot)
1 teaspoon garlic powder
1 tsp cayenne pepper
Brown the sausage,
drain fat put the sausage in the crock pot
add low sodium V8 juice
add onion, carrots and sugar snap peas
I also added some left-over cauliflower I had
add cabbage
add garlic powder and cayenne pepper
pour in chicken stock (adjust amount depending on the size of your crock pot)
Cook 10 hours on low
The flavor of the soup was so good. Plenty of vegetables and so good for you. 🙂 I was hoping to have some to freeze but we ate it all. 🙁
