Today I want to share with you my Platinum chili recipe. I make this when I want to be a little fancy… Ha ha. Honestly the leaner the cut of meat you put in your chili only makes it a healthier dish. I like using Sirloin Steak because it has an awesome flavor and is usually pretty tender especially when you slice it thin. I also LOVE mushrooms in almost anything and in chili they are the bomb! They absorb the chili sauce and they are so yummy. 🙂
You’ll need:
1 1/2 pounds sirloin steak
1/2 cup diced onion
a couple cloves of garlic minced
a little olive oil to brown the steak
2 cans black beans or chili beans
2 cans tomatoes (I used a quart of my canned roma tomatoes)
2 Tablespoons chili powder
cayenne pepper to your taste
Thinly slice your steak and remove any fat. I do this when the meat is still a little frozen it makes it easier to slice.
In a large dutch oven or pot brown your sliced steak with the onion and garlic in the olive oil over medium heat .
Add tomatoes, beans, chili powder and cayenne pepper to your taste, we like ours pretty spicy. Bring to a low boil, reduce heat to a simmering boil. Cook for at least 30 minutes so flavors can combine.
Add mushrooms. I do this right before serving so they are still nice and firm when you eat them.
I served mine over small cheese filled raviolis. You can use any pasta or none at all I hope you enjoy this twist to my regular chili recipe. 🙂
