Macaroni Salad

Today is going to be another beautiful day. Highs around 80 and low humidity. Great day for a cook-out. We were planning on cooking out last evening for Father’s day but my kids decided they wanted to get Dad his favorite pizza instead. It’s from a local pizzeria called Joe’s Pizza. If you live around my area you will certainly have heard of it. It’s been in business for at least as many years as my husband’s been alive. I won’t say how many but it’s quite a few 😉 Anyway I made this simple macaroni salad for the cool-out that we are having tonight and I thought I would share the recipe with you. You can add peppers, carrots to this recipe etc if you wish.
You’ll need:
8 oz elbow macaroni cooked
4 hard boiled eggs chopped
1/4 cup mayonnaise
1/4 cup sour cream
1/4 cup Italian dressing
1 tablespoon yellow mustard
1 tablespoon champagne vinegar
salt and pepper
Put the cooked macaroni in a large bowl. add the mayonnaise, sour cream, Italian dressing, mustard and vinegar.
Add the eggs, pickles and mix. Salt and pepper to taste.
Chill for a couple hours and serve.
It’s always a big hit. The Italian dressing gives it a little zing.
