Chocolate Bark with Coconut Oil

I’ve been experimenting with the coconut oil I received from Tropical Traditions. I found a really simple recipe for chocolate bark.  Yummy cocoa flavor, the oil gives it a mild coconut taste. I used sucanat. You can use any type sugar. It took 20 minutes tops to make.  My husband loved it.

I took it to work yesterday to let DR. E try it, he’s another one of my guinea pigs. He really loved it too. In the picture mine looks a little lop sided, more seeds on one side. Must have been a slant in the freezer. Still tasted great.

Chocolate Bark with Coconut Oil

Easy 4 ingredient recipe for chocolate bark using coconut oil and sucanat.

Ingredients

  • 1/4 cup virgin coconut oil
  • 1 1/2 tablespoon unsweetened cocoa
  • 1/4 teaspoon sucanat/sugar
  • 2oz sunflower seeds

Note

Use can add 2 ounces of any nut or seed, or none at all.

Directions

Step 1
In a small bowl add the coconut oil.
Step 2
Melt the coconut oil in bowl place in hot water so it melts slowly. Never microwave coconut oil to melt.
Step 3
Add cocoa powder.
Step 4
Add sucanat/sugar, mix.
Step 5
Add sunflower seeds, mix.
Step 6
Chill metal cookie sheet in freezer for 10 minutes. Line with wax paper. Spread mixture. Place in freezer for a couple minutes. It will harden quickly.
Step 7
Remove from freezer. Break into small pieces and enjoy. ( Mine was on a slant in the freezer).
