Ingredients

  • 8 cups chicken broth
  • 1 cup of brown rice
  • 1 tablespoon olive oil
  • 1 lb kielbasa
  • 1 onion halved and thinly sliced
  • 1/2 head green cabbage cored and finely shredded
  • 1 teaspoon garlic powder
  • 1 sea salt
  • 1 pepper

Instructions

  1. Add chicken broth to the large dutch oven. Mine was frozen.
  2. Slice an onion in half and cut into thin slices
  3. Cut kielbasa in half lengthwise and thinly slice.
  4. Brown kielbasa and onion in a frying pan.
  5. Add cooked rice to broth.
  6. Add kielbasa and onion to broth.
  7. Thinly slice half cabbage head.
  8. Add cabbage to the broth.
  9. Add sea salt, pepper, and garlic powder.
  10. Simmer on low for at least one hour.

Recipe Notes

I used frozen homemade chicken stock and pre-cooked frozen whole grain rice in this recipe. I also substituted turkey sausage for the kielbasa. 50 % less fat. I simmered my soup for several hours.
