Preheat the oven 350° F.

In a large bowl gently mix all the ingredients except the cheese and ketchup.

Separate the meat mixture into 2 portions.

Spread half into the 9 x 5 loaf pan. I made a small well in the center of the loaf for the cheese. Don't want to forget the cheese!

Place the cheese in the well.

Top with the other half of the meat, making sure you are able to seal the meat together on the sides, enclosing the cheese.

I used mozzarella slices in mine but you can use shredded if you prefer.

Top with ketchup, as little or as much as you like.

Place the meatloaf on the center rack of the preheated oven.

Cook uncovered for 50 - 55 minutes, or until the temperature reaches 160.

Let the meatloaf sit for about 10 minutes before serving.

The best part is when you slice open the meatloaf and all the gooey melted cheese oozes out...yummy!
