Roasted Vegetable Udon Noodle Soup

Ingredients

  • 1 package Fortune’s Udon Noodle
  • 2 cups water
  • 2 cups broccoli flowerets
  • 3 sweet peppers small
  • 1 cup fresh spinach
  • 6 green onions
  • 4 garlic cloves
  • Olive oil
  • Fresh ginger optional

Instructions

  1. Lightly coat a sheet pan ( I cover mine with foil for easy clean up) with olive oil. Add the evenly chopped vegetables and lightly spray with olive oil.
  2. Roast the broccoli, sweet peppers, garlic and green onions as directed in this recipe.
  3. Follow this recipe for roasting fresh vegetables
  4. Add the 2 cups of water to a medium saucepan, bring to a boil. Add the udon noodles and the flavor packet, I’m using the Original Shoyu flavor.
  5. Cook for 2 to 3 minutes, then add the fresh spinach
  6. Mix the roasted vegetables into the udon noodle soup
  7. Bring the udon noodle soup back up to a boil. Remove from heating
