I crushed up the pork rinds using a food processor. If you don't have one you can put them in a plastic bag and crush them with a rolling pin. They are easy to crush.
Using a sharp knife remove the skin from the chicken breasts.
Spread the crushed pork rinds on a plate. Place the breast meat side down to coat with the pork rinds. Sprinkle the mixture on the rib side.
Place meat side up in a greased baking pan. Sprinkle with the garlic powder, pepper, and salt.
Bake in a 375 F oven for about one hour or until the temperature reaches 165 F. Cooking time depends on the size of your chicken pieces.
