Ingredients

Lemon Cake

  • 1 box lemon cake mix
  • 8 ounces pineapple mashed
  • 1 cup extra virgin olive oil
  • 3 large eggs beaten

Cream Cheese Frosting

  • 8 ounces package cream cheese softened
  • 1 tsp vanilla extract pure vaniila
  • 1 tbsp water
  • 4 cups powdered sugar
  • 4 tbsp butter softened

Instructions

  1. Oil and flour a 9 x 12-inch cake pan
  2. Pour in the cake batter
  3. Bake in preheated 350-degree oven for 40 to 45 minutes or until a toothpick inserted into the center of the cake comes out clean

Cream Cheese Frosting

  1. Whip the eggs for a couple of minutes until fluffy

  2. Combine with the other ingredients and mix

  3. Beat on medium speed for 2 minutes

  4. Add the crushed pineapple

  5. Frost the cake when cooled
