1package Fortune’s Udon Noodle
2cupswater
2cupsbroccoli flowerets
3sweet peppers small
1cupfresh spinach
6green onions
4garlic cloves
Olive oil
Fresh gingeroptional
Instructions
Lightly coat a sheet pan ( I cover mine with foil for easy clean up) with olive oil. Add the evenly chopped vegetables and lightly spray with olive oil.
Roast the broccoli, sweet peppers, garlic and green onions as directed in this recipe.
Follow this recipe for roasting fresh vegetables
Add the 2 cups of water to a medium saucepan, bring to a boil. Add the udon noodles and the flavor packet, I’m using the Original Shoyu flavor.
Cook for 2 to 3 minutes, then add the fresh spinach
Mix the roasted vegetables into the udon noodle soup
Bring the udon noodle soup back up to a boil. Remove from heating
