Bacon & Egg in a Heart

Protein-packed bacon and egg breakfast served in the shape of a heart. 14 grams of protein per serving. A great way to start the day.

Ingredients

  • 4 slices bacon
  • 2 slices bread
  • 2 tbsp. butter
  • 2 eggs
  • sea salt
  • freshly ground black pepper
  • 1 tbsp. chopped green onions

Instructions

  1. Preheat oven to 400 degrees F
  2. Cut each strip of bacon into 5” pieces then fold in half lengthwise. Take two folded strips and shape them into a heart. I used toothpicks to hold the bacon pieces together.
  3. Place on a baking sheet and bake until crispy, about 12-15 minutes. Keep an eye on them while they are cooking in case they start to come apart.
  4. Place each crispy bacon heart over the bread and cut out a heart shape from the bread.
  5. Melt butter in a large ovenproof skillet over medium heat. Add the bread and toast until golden on one side.
  6. Flip the bread and add bacon hearts to the center of each piece of bread.
  7. Crack eggs into the centers of the bacon hearts.
  8. Sprinkle eggs with salt and pepper. Transfer skillet to oven and cook until egg whites are set about 5 minutes

Recipe Notes

I used toothpicks to hold the bacon together while baking. Keep checking the bacon while it's cooking in case it needs to be adjusted.
