Super Moist & Chunky Apple Cake

I had several apples that needed to be used in something before they spoiled so I decided to make a super moist and chunky apple cake. It’s a nice sweet dense cake with chunks of tart apples all through it. No icing for this cake, I think it’s perfectly sweet enough all by itself.

You’ll need:

1 cup applesauce I used my homemade
2 eggs
1 cup brown sugar, packed
1/2 cup coconut sugar or any other unrefined sugar or regular white sugar
2 teaspoons cinnamon
1/2 teaspoon salt
1 teaspoon vanilla extract
2 cups whole wheat flour
1 teaspoon baking soda
4 or 5 cups apples, cored, peeled and cut into small chunks

In a large bowl mix together the applesauce, eggs, both sugars, salt and vanilla until well blended.
img_2854Slowly add the flour and baking soda and mix. The batter will be thick.
Fold in the apple chunks.
img_2866Evenly spread the mixture into a greased and floured 13 x 9-inch cake pan.
img_2870Bake in a pre-heated 350 degrees F for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean. Mine started browning before it was finished so I lightly covered it with foil.  Make sure you keep an eye on your cake. 🙂
