A very dear friend of mine shared this Simple Soup Bean Recipe with me many years ago. It’s a creamy, satifying, comfort food.

My longtime friend Glenna would make this simple soup bean recipe for dinner when I would visit on the weekends. She told me her momma always kept dry beans on hand. This dish was and still is inexpensive to make, and beans are a great source of iron and protein. Instead of bacon, her mom made hers with ham hocks, or nothing at all if money was extra tight. Even without the bacon, this dish tastes delicious.

Simple Soup Beans

Simple Soup Beans Recipe

2 cups dry Great Northern beans
4 slices uncooked bacon chopped into small pieces
1/4 cup diced onion
6 cups of water
salt
pepper

Put all the above ingredients together in a large pot with a lid.

Heat to a boil. Reduce heat to a simmer, cover and cook for 2 hours.

Serve the Soup Beans with a big slice of crusty bread.

Ingredients

  • 2 cup Great Northern beans dry
  • 4 slice bacon uncooked chopped into small pieces
  • 1/4 cup onion chopped into small pieces
  • 6 cup water
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Place all the above ingredients together in a large pot with a lid.

  2. Heat to a boil. Reduce heat to a simmer, cover and cook for 2 hours.

  3. Serve the Soup Beans with a big slice of crusty bread.

On September 21, 2013, Glenna passed away after a long battle with an inoperable brain tumor. She was only 62.  Glenna and I spent much of our time looking for and shopping at yard sales. Glenna was a master wheeler-dealer at yard sales. I miss our long talks, and how much she cared about my mother and me. She would let me share my feelings without judgment. Note: I watch for sales and stock up on dry beans. Dry beans store beautifully sealed in a container and kept cool and dry.
