Today I am reviving an old post of a favorite recipe of mine. Crunchy Noodle Cole Slaw. I am going through all of the older ones to see if I want to update them in any way. This one looked pretty good and since it’s almost Earth Day I decided to recycle this recipe. 🙂

Have you eaten ramen noodles?  I used to be addicted to them, lol. Not anymore thank goodness. I still purchase them occasionally when I want to make this delicious summer salad. It’s so simple to make. When I take it to BBQ’s everyone always asks for the recipe so be prepared.

You’ll need:

1 (16 ounces) bag coleslaw mix or one small head of cabbage
1/2 cup sunflower seeds
1 (3 ounces) ramen noodles (any flavor, you won’t be using the seasoning packets so it doesn’t matter)
2 green onions
1/2 cup olive oil
1/4 cup cider vinegar
1/4 cup sucanat/sugar

Before you open the ramen noodles take a rolling pin or something else and smash the dry noodles. They smash easily.Crunchy Noodle Cole Slaw 011I was able to get my green onions from my garden use as many as you want, I used three.Crunchy Noodle Cole Slaw 006Dice up the onions using all of the stems.
