Today is grand kids day, and my granddaughter Katie wanted to make cupcakes so we decided on Rainbow Cupcakes made with Jello. Katie thought the cupcakes matched her bear perfectly. Plus pink icing because that’s her favorite color.

You’ll need:

1  recipe of homemade vanilla cake or a boxed white cake mix

1 small package cherry jello

1 small package orange jello

1 small package lime jello

Make your cake batter as directed.

Divide evenly into 3 bowls.

Add the jello to each bowl, mixing well.

Line your cupcake tins. I used white paper liners so you could see the colors when they’re finished.

Spoon 1 -1/2 tablespoons of each color into the paper lined cupcake holders.

Bake in a preheated  325 F oven for about 18 minutes or until a toothpick comes out clean.

We made a simple buttercream icing and made it neon pink with food coloring to top our Rainbow Cupcakes Made With Jello.

You’ll need:

3 cups confectioner sugar

2 tablespoons of milk or more if needed

1 teaspoon vanilla

1/8 teaspoon salt

Whip the sugar, milk, vanilla, and salt together in a small bowl. Katie loves wearing her apron her aunt Marilyn made for her.

Add food coloring and mix.

Frost and eat, this is definitely Katie’s favorite part.

They turned out great. I tried piping the icing on the cupcakes at first but the bag busted so I gave up. We had more fun doing them by hand anyway. Each color in the cupcake had a separate taste. Pretty good. You could cut back on the amount of jello to make them not so flavorful. The colors were awesome!
