Oatmeal Cranberry Cookies

It has been super busy around here these past few days, cleaning up from Thanksgiving. Katie has been staying with me since Thanksgiving day. Katie and grandma have been best buddies, hanging out together. Grandma has her own TV room and Katie has been in there watching cartoons and snuggling with grandma, it’s the sweetest thing I’ve ever seen. They are like two little girlfriends watching cartoons and eating treats. I must admit I’d never thought this would be a memory I would have with my mom. Lol!

Katie and I made some cookies, Oatmeal Cranberry. It is actually a recipe from my big brother Jim. I can honestly say I never dreamed I would be recipe swapping with my big strong brother, but we are. He is retired now and has taken up cooking for himself and his wife who still works full time. Isn’t that sweet?

Oatmeal Cranberry Cookies

Ingredients

  • 3/4 cup butter
  • 3/4 cup packed brown sugar
  • 1/2 cup sucanat/sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1 - 1/2 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 cups oats
  • 1 cup cranberries

Put the butter into a large bowl.

 

Mix in brown sugar and sucanat/sugar.

 

Add eggs and vanilla.

 

Slowly add flour.

  

Mix in baking soda, cinnamon and salt.

 

Slowly mix in oats.

Add Cranberries. You can see Katie’s finger trying to sneak in for a taste in the first picture… ” Sorry Katie raw eggs!”

 

Use a tablespoon to form cookie balls.

Place on a parchment lined cookie sheet. Bake in a preheated 375 F. oven for 8 -9 minutes for chewy and 10 – 11 minutes for crispy.

 

I love these cookies. They are simple to make and delicious to eat 🙂
