Cheesecake is one of my favorite desserts. It took me many years before I would even try cheesecake. Cheese and cake didn’t sound right together. What I was missing! lol.  I love making little mini ones they are so easy anyone can make them. I thought I would melt some candy and make them a little extra special.

You’ll need:

12 vanilla wafers
8 ounce package cream cheese
1/4 cup & 2 Tablespoons sucanat/sugar
1 egg
1/2 teaspoon vanilla extract
1 regular size snickers bar
1/4 cup chocolate chips

Line a cupcake pan with liner. I used my silicone cupcake liners which I love! They are reusable, wash up nice and your cupcake pops right out without sticking. It’s amazing. Put 1 vanilla wafer at the bottom of each cupcake. Set aside

In a bowl cream together cream cheese, sugar, egg and vanilla extract. Beat with a mixer until creamy.

Spoon over the cookies until evenly distributed between the 12

Bake in a preheated 350 degree F. oven for  15 minutes.

In a small microwavable bowl melt the snicker bar and chocolate chips, mix well.

When cooled top each with melted candy.

Refrigerate until you are ready to eat. I drizzled some chocolate over the top before serving.
