Kale Braised

I grew kale for the first time this year. It’s doing great. It must love hot, dry weather.

I am still pretty new to eating and preparing kale. I have been looking for different ways to use the kale in my cooking. I made kale chips during the winter and wrote a post about the health benefits of kale.

I must admit it is a little tougher then the greens I’m used to eating. I thought I would try several different ways to cook this super food and see what happens. I found a simple recipe here. This is an easy recipe and thought it was a good place to start.

You’ll need:

kale

2 Tablespoons  extra virgin olive oil

4 cloves garlic finely minced

1 cup water

1/4 cup champagne or red wine vinegar

salt and pepper

Wash and dry your kale.

Remove stems if desired.
  
Roll the kale and slice into thin strips

Add oil to  a large fry pan or pot. Heat over medium heat.

Add finely diced garlic

Cook until softened.

Add kale and water

Simmer over low heat. Stirring kale occasionally until tender. I simmered it for about 12 – 15 minutes. It will take much longer if you didn’t remove the stems.

Season with salt and pepper. Add vinegar stir and eat.

Overall I thought it was pretty good. I love garlic so I will add more the next time. Stay tuned for recipe #2. Do you have a special way you cook kale?
