Found a recipe here and tweaked it a bit. 🙂

You’ll need:

3 boneless chicken breasts pieces

3/4 cup honey I used some beautiful light colored local honey

1/2 cup mustard I used a spicy brown mustard

3 slices of bacon

1/2  cup shredded mozzarella cheese

In a small bowl mix together the honey and mustard.

Place your chicken breasts in a baking pan. I cut them in half so they were all about the same size for a more even cooking.

Top with some of the honey mustard sauce.

Take your bacon slices and cut them in half. Place them on top of your chicken.

Cover again with your honey mustard sauce.

Bake in a preheated 375 F degree oven for about 30 minutes.

Sprinkle with cheese.

Place under the broiler for a couple minutes to melt the cheese.

Remove from oven and enjoy.
