No Bake Oatmeal Cookies 

As I grow older I become even more conscious of the importance of taking care of what I feed my body and my soul. My husband and I both decided this year, we would make the foods we eat a priority. It’s something that can be a win-win for us both. I decided for the upcoming Valentines day I would bake some heart healthy, heart shaped cookies packed with only heart healthy ingredients.

Heart Healthy Cookies

They turned out to be even better than I imagined they would. These cookies are moist and full of so many yummy flavors. They are soft, nicely chewy, and slightly sweet. It’s like a flavor and texture party in your mouth! These cookies would be a great way to start the day, or perfect for a mid-morning or mid-day snack.

We’ve been cutting down on carbs so I have been using less flour in my recipes. I am amazed at how you can make perfectly delicious treats without any flour or sugar at all.

You’ll need:
2 cups quick oats, I used organic
1 teaspoon cinnamon
1/2 teaspoon sea salt, I used Himalayan Pink
1 cup Simply Sesame with Vanilla with Almond Bits
1/4 cup honey, I used local honey
1/3 cup applesauce, I used my homemade applesauce
1/3 cup pureed pumpkin, I used my pumpkin puree
1/2 cup chopped walnuts
1/2 cup chopped cranberries
1/4 cup chia seeds

Combine all the above.

I found these cute heart cookie cutters, sprayed them lightly with oil and filled each one with the batter. It’s thick so I used my fingers to press them into the cut-out. Each cookie is about a half inch thick.
