- 1 teaspoon butter/olive oil or spray oil
- 2 eggs
- ¼ diced onion
- ¼ diced green pepper
- ¼ cup cheddar cheese
- ¼ cup diced ham
- 2 tortillas
- In a large skillet over medium heat saute in olive oil or butter the green peppers, onions and ham for a few minutes.
- Whip the eggs with a fork or whisk in a small bowl. Pour into skillet with peppers and onions, add cheese.
- Stir gently until firm.
- I like to soften and warm my tortilla between two paper towels for a few seconds in the microwave.
- Wrap and enjoy!
