Ingredients
  • 1 teaspoon butter/olive oil or spray oil
  • 2 eggs
  • ¼ diced onion
  • ¼ diced green pepper
  • ¼ cup cheddar cheese
  • ¼ cup diced ham
  • 2 tortillas
Instructions
  1. In a large skillet over medium heat saute in olive oil or butter the green peppers, onions and ham for a few minutes.
  2. Whip the eggs with a fork or whisk in a small bowl. Pour into skillet with peppers and onions, add cheese.
  3. Stir gently until firm.
  4. I like to soften and warm my tortilla between two paper towels for a few seconds in the microwave.
  5. Wrap and enjoy!
