Creamy Bacon, Avocado, and Tomato Pasta Salad

My husband loves anything with bacon. I don’t make it very often, but when I do I try to make it as healthy as I can. So I found this tasty recipe that includes avocados along with the bacon. Avocados are an excellent source of good fat. Nice to know some fat is good! 🙂

You’ll need:

8 ounces cooked pasta

1 large avocado, pitted and sliced

1 cup halved grape or cherry tomatoes

6 slices crispy cooked bacon

1/2 cup mayonnaise

2 tablespoons lemon juice

1/2 teaspoon garlic powder

1/2 teaspoon sea salt

1/4 teaspoon fresh pepper

1 teaspoon of dried dill

Cook the pasta and fry up the bacon … then let cool.

In a bowl whisk the mayonnaise, lemon juice, garlic powder, salt, pepper, and dill together.

 

Add the cooked pasta, bacon, tomatoes and avocado and mix. Chill for 30 minutes.

 

If you are making this salad for a later date add the avocado 30 minutes before serving so it doesn’t get brown. That’s it, simple as can be. It’s really tasty too. 🙂
