Chicken Soup in the Slow Cooker

Preparing chicken soup in a slow cooker brings out the rich flavor of the chicken.

I have been making chicken soup for as long as I can remember. It was something my mom taught me early on. She always made it for us when we were sick. Since I caught a cold this past week I thought I would medicate myself with chicken soup. What could be better medicine then that?

You’ll need:

1 whole chicken ( you can use chicken pieces if you want, a white and dark mix makes for a better-flavored broth).

1 small onion chopped

2 carrots sliced

4 cloves garlic chopped

2 stalks celery sliced (I didn’t include celery in mine this time because I didn’t have any on hand).

salt and pepper

Place the cleaned chicken in the slow cooker. Cover with water.

Add the onion, carrots, garlic, celery, salt, and pepper.

Cover and cook on low for 8 hours.

Remove the chicken from the broth carefully. I usually use 2 large slotted spoons. Let it cool on a plate until you can comfortably handle it, Remove the chicken from the bones.

Add the chicken back into the broth.

Serve with noodles. It’s really extra good with homemade noodles. They take some time to make. I usually make a large batch and freeze some so it’s worth the effort. I will share how to make them with you soon.
