On a Low Carb diet and dying for a nice big slice of pizza? Make your pizza crust using cauliflower with this Cauliflower Pizza crust recipe.

My daughter found this recipe and  has been raving about how delicious it is. Since I love cauliflower I decided I would try it and see what all the fuss is about. We love having homemade pizza every once in a while. I don’t like eating white flour products so I make mine using whole wheat flour and it’s very good. I thought if this tastes anything like pizza crust I’m going to be in heaven. This recipe is a popular South Beach diet recipe. My daughter started on the diet a week ago. I tried the diet a few years ago and was amazed at how well you shed the pounds in a short amount of time by simply removing certain foods at certain times in the diet.

So we tried the cauliflower pizza crust and now I have another reason to love this amazing vegetable. It tasted incredible! It’s easy to make too!

You’ll need:

1 cup riced cooked cauliflower

1 egg beaten

1/2 teaspoon garlic powder

1/2 teaspoon dried oregano

1 cup shredded mozzarella cheese olive oil toppings of your choice

First you need to rice and cook the cauliflower. Using a food processor or you can also use a hand held grater. In the food processor pulse the chopped cauliflower until it resembles a grain. Do not over pulse so it turns mushy.   Put the cauliflower into a microwave safe bowl and microwave for about 8 minutes.

Add the beaten egg, garlic and oregano and mix together.

Spray a cookie sheet or pizza pan with oil to keep the crust from sticking to the pan.

Spread evenly. I doubled the above  recipe to make a larger pizza.

Brush the crust with olive oil to encourage browning.

Cook in a preheated 450 F oven for about 15 to 20 minutes. Mine took about 20 because I doubled the recipe. Remove from the oven when it is nice and crispy brown.

Top with your favorite toppings. I used leftover spaghetti sauce, sliced red onion and parmesan cheese.

Broil on high to heat toppings. Slice like you would any pizza and eat 🙂 Verdict is… it tasted amazing. I love roasting my cauliflower in the oven and this makes a beautiful crust. You can use any topping you like to make it unique to your tastes.

Cauliflower is so nutritious too! Cauliflower is high in  dietary fiber,  folate, water, and vitamin C. A high intake of cauliflower has been associated with reduced risk of aggressive prostate cancer.

I share at these parties.
