Baked Spinach and Artichoke Dip

baked-spinach-and-artichoke-dip-7-1024x768-1Today I want to share a super easy appetizer  you can make for your next party or gathering. Maybe this Sunday you are having or going to a Super Bowl party? This dip is so easy and tastes really good. It takes less than 30 minutes to make from start to finish. You can use reduced fat cheese and mayonnaise to cut some calories. I always try to do this when I can, much to my husband’s dismay. I figure he’ll never know the difference unless I tell him. 😉

You’ll need:

14 ounces of artichoke hearts drained and chopped

10-ounce package of frozen spinach, thawed and drained.

1/4 cup diced red pepper

1 cup reduced fat mayonnaise

1 cup Parmesan cheese

2 1/2 cups Monterey Jack cheese

In a large bowl mix the artichoke hearts, spinach, red pepper, mayonnaise, Parmesan cheese, and 2 cups of Monterey Jack cheese together.

Place the mixture into a lightly greased casserole dish. Sprinkle the rest of the cheese on top. 

Bake in a preheated 350 F degree oven for 15 – 20 minutes or until cheese is melted.

Serve with crackers or chips. Hope you enjoy it much as we do. 🙂
