Summer Salad

I was so excited when I came home from vacation to see my cucumbers and tomatoes ripening. One of the first things I did was to pick them to make a cold summer salad. That evening I sliced and diced the vegetables and whisked up my dressing. Set it in the frig to chill. My husband went into the refrigerator to get something and dumped my whole bowl of vegetables on the floor. I was stunned into silence. I knew he had to feel terrible because I was so outwardly excited about my garden bounty. All is forgiven. I had to wait a few days and make it again when more vegetables ripened. The floor salad made it out to the compost pile, so all was not lost 🙂 You have to keep smiling or go crazy. ( I only wish I had taken a picture).

You’ll need:

Salad

3 small  cucumbers

1 green pepper

2 small onions

1 large tomato

2 cloves garlic

Dressing

1/4 cup champagne vinegar

1 teaspoon sugar

1 teaspoon fresh  oregano

1/4 teaspoon sea salt

1/4 teaspoon fresh ground black pepper

1/4 cup extra virgin olive oil

In a large bowl peel and cut cucumbers into bite size pieces.

Add green pepper cut into bite size pieces.

Add thinly sliced onion.

Add diced fresh tomato.

Add fresh diced garlic.

Mix.

In a small bowl whisk together champagne vinegar, sugar, oregano, sea salt, black pepper and extra virgin olive oil. Chill.

After the dressing is chilled pour over vegetables and mix.
