Strawberry Oatmeal Cookies

Strawberry Oatmeal Cookies 047

Spring is coming soon, believe it or not. It’s been a very long winter. With the coming of spring we will be having lots of strawberries at great prices. This week they were priced $1.00 a quart. That is an awesome price. I made these delicious Oatmeal Strawberry cookies. I hope you enjoy them as much as we did.

1 cup softened butter
1 1/4 cups brown sugar
3/4 cup sucanat/sugar
1 tablespoon honey
2 teaspoons pure vanilla extract
2 eggs
1 1/2 cups whole wheat flour
1/4 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
3 cups rolled oats
1 1/2 cups nuts and or chocolate chips I used 2 large Snickers bars chopped into small pieces.
1 1/2 cups strawberries, hulled ( cut in halves or quarters, depending on size)

In a large bowl cream together the butter and sugars.

Now add your flour.

Mix in the oats. It will be very thick.

Add your nuts or chips. I added 1 1/2 cups of chopped up snickers bars. I had them on hand and it includes nuts and chocolate so it sounds perfect to me. :)

Fold in the strawberries, careful not to overly mix so the strawberries get mushy.

Place by the tablespoonful on a lined baking sheet.

Bake for 8 to 10 minutes in a 375 F preheated oven.

These cookies are a little more wet then traditional oatmeal cookies so they spread out a bit more. Bake a little longer for a crisper cookie. The snickers bar made a delicious addition especially with the caramel. Yum!

I share at these parties.

These sound yummy. My small people love strawberries, so I’m sure they’d love these. I like the idea of adding chopped up snickers bars in place of nuts. Thanks for sharing at Food on Friday.
