Spicy Meatloaf

My back is slowly recovering. I still am not allowed to sit. But I can stand and walk, so I’m good. At work, I put my computer up higher and I get the best chiropractic care in town right there on the job. The doctor has me doing decompression therapy. I have seen it work miracles on people. So I know in time I will be good as new… well maybe not good as new but back to my normal middle-aged self. šŸ˜‰

I have been able to do more cooking this week. Over the weekend my sister in law brought over a wonderful dinner that we ate for a couple of days. She is a special person.

It was such a blessing. To eat someone else’s homemade cooking isĀ something I love to do. I’m usually the one doing the cooking.

I decided to make meatloaf this week. It’s a no-fuss easy kind of dish. Slap a bunch of stuff together, shape it and bake it. Sounds easy enough and it is. I make it several different ways and today I am sharing one of them. Spicy meatloaf.

You’ll need:

1 pound ground chuck

1/2 pound ground sausage

1 cup dry bread crumbs

1/2 tsp cayenne pepper

1/2 tsp chili powder

1 tsp oregano

3 cloves garlic minced

2 green onions sliced thin

1 tsp fresh thyme

1/2 tsp sea salt

1 egg

Topping

1/4 cup ketchup

dash Worcestershire sauce

dash hot pepper sauce

1 tablespoon honey

Mix together in a large bowl theĀ beef and pork.

Add bread crumbs, cayenne pepper, chili powder, oregano, and sea salt.

Add minced garlic and egg. Mix.

Add fresh thyme. Mix.

Add fresh green onion. ( I sliced the green onion thin and saved the white part to sprinkle on top)Ā Then mix again!

In a small bowl mix ketchup, Worcestershire sauce, hot pepper sauce, and honey.

Shape meat into a rectangle and place it in an 8×5 or 9×6 loaf pan. Spoon sauce over the meatloaf.

Sprinkle theĀ green onion on top.Ā That’s about as creative as I get.

Bake in a preheated 325Ā F oven for 1 – 1/2 hours until internal temperature reaches 165 F.

Take out of the oven. RemoveĀ the meatloaf from theĀ pan and place on a platter. Slice and eat.
