As you can tell by the name of the post my husband and I are still sticking to heart-healthy recipes. Well… mostly we are sticking to it. 🙂

Skinny Mini Apple Pie recipe

I wasn’t sure how the recipe was going to turn out but, we were pleasantly surprised. They were plenty sweet enough, and the texture of the oatmeal was scrumptious!

Skinny Mini Apple Pies

Ingredients

  • Pie crust, I used store bought 2 crusts
  • 6 to 8 medium-size granny smith apples, peeled and cored
  • 1/2 teaspoon of cinnamon
  • 1/4 cup organic sugar, I used coconut sugar
  • 2 tablespoons whole wheat flour/white flour
  • 1 tablespoon of lemon juice
  • Topping
  • 3/4 cup organic quick oats
  • 3/4 cup whole wheat flour/white flour
  • 1/2 teaspoon cinnamon
  • 4 tablespoons butter chilled and diced

Instructions

  1. In a large bowl mix together the apples, lemon juice, sugar, cinnamon, and flour until evenly coated.
  2. I used my 1 cup measuring cup to make small circles for the mini crusts.
  3. Fill with the apple mixture.
  4. In a small bowl combine the quick oats, flour, cinnamon and chilled diced butter. Mix until crumbly.
  5. Top the apples with the oatmeal mixture.
  6. Bake in a preheated 375-degree oven for 15 - 20 minutes, rotate the pan and bake an additional 5 - 10 minutes or until bubbly and brown.

I used my 1 cup measuring cup to make small circles for the mini crusts. You can use anything that you have around the house that will make a circle.

Spray the pan with oil and place a mini crust into each cupcake.

Fill with the apples.

In a small bowl combine the quick oats, flour, cinnamon and chilled diced butter. Mix until crumbly.

Top the apples with the oatmeal mixture.

Bake in a preheated 375-degree oven for 15 – 20 minutes, rotate the pan and bake an additional 5 – 10 minutes or until bubbly and brown.
