If you are a regular reader you know I work as the office manager in a chiropractic office. The doctor is one of my taste testers. When I make new recipes bring a sample for his opinion. In turn, when he or his mom make something delicious he will share some of it with me. So last Thursday I went into to work and the doctor started telling me about this simple chicken dish his mom made using mayonnaise and parmesan cheese. He raved about how moist it was. I am always looking for simple chicken recipes. I went home that night and this is what I made. Just like he raved, it was incredibly moist and flavorful. You could flavor it with your favorite herbs and spices. I chose garlic and herb.

You’ll need:
4 boneless skinless chicken breasts
1 cup fresh shredded Parmesan
1/2 cup mayonnaise
1 tablespoon garlic and herb seasoning.

Lightly spray a large glass dish with oil set aside
Pour the parmesan cheese into a shallow bowl, I used a pie plate.
Spread the mayonnaise on both sides of the chicken. Sprinkle with the garlic and herb seasoning. Press into cheese to coat.

Turn over and coat the other side of the chicken with cheese.
Lay the pieces into the lightly oiled pan.

Cook in a preheated 375-degree oven for about 45 minutes. ( Times can vary depending on the size of the chicken pieces.)
Remove from oven.
