I bought green beans last week and was wondering if I could roast them like I do sugar snap peas. On Tuesday Sarah at Nature’s Nurture linked up a recipe for roasted green beans and mushrooms at The Gathering Spot. How lucky can a girl get? I of course tweaked it a little. I used what I had on hand which was garden fresh scallions to roast with the fresh green beans.
You’ll need:
A couple hand fulls of fresh green beans
about 8 scallions mine were small so I used 14
2 – 3 Tablespoon extra virgin oil oil
1/4 cup fresh Parmesan
Cut the ends off the beans and rinse.

Cut the ends off of the scallions and rinse.

Put green beans and scallions in a bowl

Sprinkle olive oil and garlic powder on the green beans and scallions. Mix until coated.

Spread out on a baking sheet. I lined mine with parchment paper.

Bake in preheated 350 F oven for 20 -25 minutes. I stirred mine at 15 minutes. They are done when they are tender and browned a little bit.

Toss with Parmesan cheese and serve.

They were very good. Easy to make. I love my fresh veggies. I am always looking for different ways to cook them. Do you have a special way you cook your garden fresh green beans?

I just happen to have fresh green bean in the fridge that I was going to cook tonight! I’m going to try your recipe instead of cooking them the usual old way.

Gotta try this! Made green beans today, but stovetop – in a skillet. Never thought of oven roasting them! Pinning.

We LOVE oven roasted veggies but have never tried it with green beans! I have some growning in my garden and I must try this!
