Kettle Corn

I have always been a big fan of homemade popcorn cooked on the stove top. I switched to microwave for a long time for the convenience. But nothing beats the taste of stove top popcorn. Even when I was little in my family I was the expert corn popper. Had it down to a science when I was 12 or 13. Every Saturday night I made the  popcorn. Sometimes we would make a big batch and head to the drive-in…remember those days? Those were some great times. Anyway…I went back to the stove top method because it tastes better plus it’s much cheaper.

I love kettle corn but had never made it before. So I tried making it a couple different ways. This way seems to be the best combination of recipes and it doesn’t burn easily. You have to be careful with sugar because it burns so quick. I adapted several recipes I liked adding the sugar after the kernels started popping a bit.

You’ll need:

1/3 cup oil (I used expeller pressed coconut oil)

1/3 cup popcorn

1/3 cup sugar (I used sucanat)

salt (I used sea salt)

Large pot with tight fitting lid. Not a dutch oven…tried that 🙁 big disaster. Anybody know how to get the burnt sugar off the bottom of my pan??? One attempt big failure!

Add oil and 3 kernels of popcorn to the pot.

Heat over medium high heat until the kernels pop.

Add the rest of the kernels.

Cover and shake, let popcorn start to pop. Add sugar.

Cover and shake and cook until the popping slows to 2 – 3 seconds between pops. Remove from heat. Pour into a large bowl. Don’t touch! Popcorn with sugar is HOT!

Stir and sprinkle with salt. Eat when cooled.

This will satisfy your sweet and salty cravings.
