Ground Beef Soup

I was searching for a recipe for ground beef one evening and looked at The Gathering Spot for inspiration and I found this delicious recipe using ground beef in soup. Debbie from Our Old Homestead called it Homemade Hearty Hamburger Soup. I like this type of soup because you can change it up to what you have on hand. It turned out very hearty. It was even tastier the second day we ate it.

You’ll need:

1 – 1/2 pounds of ground chuck

1 small diced onion

3 cloves minced garlic

2 stalks celery sliced

3 cups broth (I used chicken broth because it’s what I had in the freezer)

3 cups water more if needed

1 quart canned tomatoes

frozen vegetables (I used green beans) any will do. Use what you have on hand. 

bay leaf

salt and pepper

2 cups cooked brown rice

In a large stock pot brown beef with the diced onions and minced garlic until meat is brown. Drain fat.

Add broth, water and the rest of the ingredient.

Heat to a low boil. Turn down heat and simmer for a couple hours. Add rice towards the end.

This soup was so delicious and easy to make. The best part is you can adapt it to what’s in you cupboard or freezer. My husband gave this one a big thumbs up :)
