Garlic Cheddar Chicken 7

Need a quick dinner idea? I love this chicken recipe using corn flakes. It’s easy to put together. The addition of the cheddar cheese makes it extra special. Even my picky little grand kids gobble up this chicken. My favorite part is that it’s so easy to make and it tastes like I really slaved over it. 🙂

You’ll need:

1/2 cup butter
2 cloves of garlic
1/2 cup dry bread crumbs
1 1/2 cups of corn flakes crushed
1/2 cup Parmesan cheese
1 1 /2 cups cheddar cheese
1/4 teaspoon parsley
1/4 teaspoon oregano
pinch black pepper
pinch salt
6 boneless chicken breasts

Spray the bottom of your baking pan with oil. Sprinkle 1/2 of the crushed corn flakes on the bottom of the baking pan.

In a small saucepan or in the microwave melt the butter.

In a small shallow bowl mix together all the dry ingredients.

Dip your chicken pieces in the butter then into the bread crumb mixture to coat.

Lay the chicken on top of the crushed corn flakes.

Pour the remaining butter over the chicken pieces.

Bake in a 375 F degree oven for 40 minutes or until internal temperature is 165 F degrees. The coating should be crunchy. If not place it under the broiler to crisp.
