Walnut & Cherry Spinach Salad

Ingredients
  • 8 ounces baby spinach
  • ½ cup chopped walnuts
  • ½ cup dried cherries
  • ¼ cup sugar, I used coconut sugar
  • 1 teaspoon minced onion
  • ¼ teaspoon paprika
  • ¼ cup cider vinegar
  • ¼ cup extra virgin olive oil
Instructions
  1. Toast the chopped walnuts in the oven at 350 degrees F. for 5 minutes or until toasted.
  2. In a small bowl whisk together sugar, onion, paprika, vinegar and oil. Set aside.
  3. Place the rinsed and dried spinach in a large salad bowl.
  4. Add the toasted walnuts and dried cherries to the spinach.
  5. Pour the well mixed dressing over the salad.
  6. Mix well.
  7. Serve and eat.
