Cucumber and Onion Salad

Spent the day playing outside with the grand kids. The weather was beautiful. Katie was doing some work in the garden. Tyler… well he likes to play with his trucks.
 
It’s nice to be able to work out in the garden with the kids. Katie really has enjoyed watching the vegetables grow and then being able to eat them. She thinks it’s magic.

I’m being over run with cucumbers. I can’t seem to pickle or eat em fast enough this year. I check the vines often because they seem to hide from me. And before you know it the illusive  cucumber is huge, yellow, and not good to eat. I have been searching for different recipes for using cucumbers. I was so excited when I came across a recipe for Cucumber and Onion salad. I had forgotten about this salad. So simple and refreshing. I used to make this all the time when my kids were younger.

You’ll need:

2 -3 average cucumbers

1 small sweet onion

1/3 cup white vinegar

1/3 cup water

1/4 cup sugar (I use sucanat)

1/4 teaspoon sea salt

1/4 teaspoon fresh ground pepper

Cut stripes down your cucumbers or remove the peeling.

Thinly slice cucumbers and onions.
 
In a medium bowl layer a little cucumber, then a little onion, then a little cucumber you get the idea.

In a small bowl combine vinegar, water, sugar, salt and pepper. Mix until dissolved. (I’m using sucanat so mine will have a darker color).

Pour over cucumbers and onions.

Cover and refrigerate at least 2 hours before serving. I place a plate on top to weight down the cukes and onion. My mother in law taught me to do this.

I let it sit over night. It was as tasty as I remember.
