I am still baking with blueberries! They are so perfect to toss in a pie, bread or cookie. I love these little guys! So here is another recipe using these little gems. I paired them with oatmeal and some overripe bananas, yum!

You’ll need:
1 1/2 cups flour
1/3 cup sugar
1/3 cup brown sugar
1/2 teaspoon sea salt
2 1/4 teaspoons baking powder
1/2 cup quick oats
2 eggs
2 to 3 ripe bananas
1/3 cup expeller pressed coconut oil/oil
1 cup fresh blueberries
Preheat oven to 350 degrees. Grease and flour a loaf pan
In a large bowl mix the flour, sugar, salt, baking powder, and quick cooking oats.
In a medium bowl, mash the bananas.
Beat in the eggs and oil.
Add to dry ingredients and mix to combine.
Gently add blueberry mix.
Pour batter into the prepared loaf pan. Bake at 350 degrees for 1 hour or until a toothpick comes out clean..
Cool in the pan for about 10 minutes, then remove and cool on a wire rack.
Serve and eat!
