It seems like I always have pieces of bananas leftover after my grandson Tyler who is 20 months old visits. Tyler likes to hold the whole banana peeled half way down when he eats it. When he gets to the peeling he stops eating. Even if I take off the rest of the peeling he won’t finish the banana, it’s like he doesn’t think you should eat the bottom half. Funny kid. He thinks he is so cool holding his big yellow banana
You’ll need:
2 cups whole wheat four
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter softened
3/4 cup sucanat or packed brown sugar
2 eggs beaten
2 1/3 cups mashed bananas
Preheat oven to 350 F.
In a large bowl add flour, baking soda and salt. Set aside.
Katie is signing me a song. She has become quite the little singer lately. Sharing with me all the songs she learns in pre school.

In a small bowl add butter with sugar. Cream together.(We’re using sucanat so our sugar is tan).
In a small bowl mash your bananas.
Add to sugar mixture.
Pour into flour mixture. Mix until moistened.

Pour into lightly greased loaf pan.
Bake 55 minutes or until toothpick comes out clean.

Remove from pan after 10 minutes. Turn onto wire rack and let cool. Slice and enjoy
